Nocellara is a highly prized cultivar native to Sicily. The extraordinary adaptability of these trees allowed Rosa and Giorgio to have them perfectly integrated with the soils and climatic conditions of Tuscia viterbese.
The oil obtained from this variety ranges in color from yellow to deep green, with a fruity aroma in which notes of almond, herbs, green tomato and cut grass are imprinted. Bitterness and spiciness are quite distinct and balanced with each other.
